Raw Vegan Recipe: Salsa!

As promised, I made salsa for DD and merm (and me) the day after they arrived. DD grabbed merm’s camera and documented the process. You can find the recipe here.

I scald the tomatoes very briefly to make it easy to peel them:

Peeling the Tomato

Using my bamboo cutting board and knife, I rough-chop the tomatoes:

The link goes to the cutting board like I have. There are lots to choose from but I like this one because I don’t lose the good juices.

This picture shows the approximate size and shape of the chop I go for:

Under the tomatoes, you can see the other ingredients peeking out. I used yellow sweet pepper in this batch to give it some contrast. The flavor is only slightly different from red sweet pepper.

In the Bowl

This looks like I’m really going to town mixing the ingredients:

I almost forgot the lime juice!

Another quick mix and it’s salsa!

It was too late to eat it that day so I put it in a jar to be stored away for the morrow. Overnight, the flavors intensify.

I ate it in a bowl with avocado. DD and merm ate it with beans, tortillas, and chips. To each his (her) own.

That looks good enough to eat….LOL
Tommie I have a really good potatoe peeler that peels tomatoes easily without having to scald them first.

The short time they are in the hot water doesn’t cook them, Peach. I have a good vegetable peeler, too, but it peels too much of the tomatoes.

    Thanks, Katie! It’s delish!

Wow never seen one of those lime crushers before! Do they work well? I like the touch of peeling the tomatoes as it makes the salsa so mcuh better1

Believe me, if the squeezer didn’t work well, I wouldn’t be using it! I’m so in the habit of peeling tomatoes I do it all the time except when the really good homegrown ones are coming in.
