I had a hard time getting to sleep last night but I haven’t had any desire to take a nap today. I woke up around 6 and thought that I would get up and take my thyroid med. I dozed off without doing it then got up an hour or so later and stayed up.
I did my vision therapy, and had my Quiet Time. I took the computer into my bedroom and listened to the Sabbath School discussion for a little over an hour.
Breakfast was apple sauce and a banana/coconut smoothie. I had thought that I would miss apple sauce. It’s a tradition to get apples from the Apple House and spend time making sauce every fall. I looked up a recipe on the WWW but I didn’t have all the ingredients. I substituted dates for the raisins and had to leave out the cinnamon altogether. I didn’t put in any water, either. It was three Red Delicious apples, peeled, cored, and quartered, 2 ozzies pitted dates, and the juice of half a lemon, then blended until smooth. It tasted like the real thing! My granddaughter tried it and ate a few bites, then my DIL finished it off. She thought it was a little tangy but she lived.
She and the others went to IHOP for breakfast so I got ready to kill the coconut. Killing the coconut took some muscle. I finally got it done and drank some of the water, used some plus a tiny piece of the meat in my smoothie, and blended up the rest of the water with the rest of the meat to make coconut milk. It’s in the fridge for later.
Along about 2, I made a big salad of romaine, baby carrots, green onions, celery, tomato, and lime juice. It took the juice of two limes to dress it, it was so huge. It took awhile to eat it but it was good. I was craving greens.
The others have gone out to the pool so it’s peaceful and quiet again. I must be getting old.
My son gave me a real compliment today. He weighs about 145 and he said that I probably weigh less than he does now. I’m not there yet but it was nice that he thought so.
