Just Pokin’ Around

It was another hot one last night. Where are those cooler nights when I need them?

Before breakfast, I went out and picked a mess of poke sallet. I’ve been watching it for several days now. There was enough to make me one meal today and a couple more. I do like spring.

To fix the poke stems, I needed cornmeal. I was out in the house so I went to the garage and dug some out of the freezer. I noticed the Catz’ pan was missing. It isn’t where it usually is, anyway. Maybe it’s been moved but the Catz have been here regularly for their food. The stems are cut up and in the fridge to be finished off tomorrow.

While the poke parboiled, I fixed the rest of the strawberries. I “sugared them down” since they were just a tad dry. The vinegar rinse really does keep them fresh, though.

My mail today was two bills. Well, one bill and one saying I didn’t owe anything but I needed to contact my insurance. Instead, I contacted patient billing. When I was in the hospital, I was in observation to begin with. Then I went acute and from there was put into a swing bed. Well, my inpatient deductible was applied to my swing bed and I guess that’s why I haven’t been billed for it. I shouldn’t be surprised that the billing was messed up. That was always par for the course when I was working. The woman I talked to said it’s been appealed so I’ll just sit tight.

The other bill was for my bed, etc. I paid it online and called physician billing to pay one for the pulmonologist that came last week. So…I’m current on my bills and not one stamp used.

I’ve kind of looked for a Mother’s Day card or something from DD and then it occurred to me that she crocheted a little collar-like shawl and a cowl that she gave me while she was here. She didn’t say so but that must have been for Mom’s Day.

It seemed I was a lot busier than usual. I stood long enough that my back started hurting and there was like a tight band around my rib cage. It feels better now.

Nine o’clock isn’t here yet but I’m yawning. Think I’ll wind this up and call it a day.

    Not being experienced in preparing poke, I’m mystified about the stems. Usually with greens they are discarded. Apparently not so with poke.

      I don’t discard them with any greens unless they are very tough. I cut the poke stems like okra, toss them with cornmeal and fry them in a little oil. Add salt and YUM!!

    so you do have wild edibles, when we used to talk about them on the forum you never mentioned poke and I wouldn’t have known what it was if you had….I had to google…..lol

      Some but not a lot. I have poke maybe twice a season. It can never be eaten raw. I boiled it twice and sauteed it after that.
