THAT’S Settled

When my nieces put out the word that they were coming to visit, there was a flurry of activity designed to show them the best time possible. Since I’m the only one in this area who doesn’t have a regular work schedule, it was supposed to be up to me to make sure they had a good time the first full day they were in Tennessee.

One niece said, “Some ‘maters and okra to eat to eat with family and I’ll be in bliss.” I hated to have to break it to her but ‘maters and okra aren’t coming in yet. Those are still weeks away.

After going back and forth several times via email and the sisters planning to Skype to work things out, it came to light they’d already made plans for that day. I finally took the bull by the horns and said, “Why don’t we just get together on the day everyone is available?” Well, those weren’t the exact words but you get the drift.

I could have almost heard the great sigh of relief. I think they’d hoped to spare my feelings and I hadn’t wanted to seem anti-social. So everyone involved is happy now and no one is trying to figure out how and where to fit things into an already busy schedule.

It’s been a hot one today. The new fan my cousin installed yesterday shut off one time—for about 15 seconds. It’s supposed to do that when the inside air is cooler than the outside. Where I’m sitting, it’s 79 degrees at 8:45 TT.

The bills that came on Sabbath were addressed today. The woman I talked to at the hospital told me the account that previously had a $65 balance is now zero. The inpatient account had shown I owed the $550 inpatient co-pay. However, for some reason, there was another contractual discount that Humana doesn’t show that brought the balance down to $500.36. I’ll pay that (minus my 10% discount) when I get the bill which could be several weeks.

As far as the hospitalist bill is concerned, the rep noted in the account that I have appealed it. I’m to let them know whenever I get a decision. In the meantime, they shouldn’t be pursuing collection.

Two weeks ago today, I contacted Taco Bell about the terrible burrito I got at one of their Kentucky drive-throughs. I hadn’t heard squat. From previous experience I’ve learned that posting a problem in a public forum (namely Facebook) gets results. I posted:

I had a bad experience at one of your restaurants in Kentucky. I reported it to the corporate office on the web site using the contact form. It’s been a full two weeks and there has been absolutely no response. I expected, at the very least, an acknowledgement.

An hour later, the phone rang. It was someone with Taco Bell. I couldn’t understand everything the woman said but she apologized and I’ll be getting some coupons to use at any Taco Bell anywhere. I don’t know if there’s an expiration date so I might not be able to use them any time. If you have a problem, use Facebook!

Egg BeaterAs I’d said yesterday, I planned to have some vegan hollandaise on broccoli for supper. When I got it out of the fridge, it was like hollandaise flavored jello. I used my funny looking rotary egg beater to whip it into submission.

After I beat and beat and beat it, I put it back in the fridge. When I got it back out, it had somewhat reverted to hollandaise jello. I took a mini-whisk and set to again. It didn’t do as good a job as the egg beater but it was acceptable after I used a spoon on it, too.

Second Day Vegan Hollandaise

The upshot was that it was yummy. I have enough broccoli for another meal and more than enough hollandaise. The Vegg cookbook says it will last one day in the fridge. This is the first day. Honestly, I don’t see why it won’t last longer than that if I don’t eat it all. None of the ingredients spoil quickly and I don’t think that would change after combining them.

Twinkle is sacked out and I soon will be, too. With my waterbed heater unplugged, I can sleep well in a warm room.

    It will be interesting to see what the visitors have planned for Tuesday. Hope they will be making good memories wherever they go.

      They will be spending time with one of their mama’s friends. This is from the email: “It will be fun to meet someone mom knew from high school days and was still friends with.” I barely know the lady so I won’t go along.

    The Hollandaise should last at least one week. What page says one day?
