Raw Vegan Recipe: Orange Mango Pudding

I was down to one orange. What to do? I decided to make pudding using that one lone orange and two champagne mangoes. This is a super easy recipe with lots of ways to vary it and make it your own.

(One large serving or two small ones)

Orange Mango Pudding

1 medium orange
2 champagne mangoes

Peel the orange and remove any seeds. If the orange still has some of the white pith, that’s okay. It adds a bit more vitamin C. Cut or pull apart into sections and chuck in the blender.

Peel the mangoes (I use a vegetable peeler) and cut the meat off the pit. Put into the blender with the orange.

Turn the blender on low, increasing the speed gradually. Briefly turn it to high.

This is where you can get creative. Taste it and if you want, you can add a bit of vanilla, some cinnamon or other spice that’s to your liking or a sweetener like agave or coconut nectar. Or you can leave it straight.

There will inevitably be a few fibers. If they are unappetizing to you, put it through a strainer or a drum sieve. With the latter use a silicone scraper to push it through.

Serve right away. Eat it all. Unless you freeze it, it doesn’t keep well. Trust me.
