Raw Vegan Recipe: Portobello Pizza

Labor Day has to have some special eats and mine was no different. I spent the day at home with Twinkle doing laundry. (I did the laundry—I can’t get Twinkle to do anything she doesn’t want to.) When I was at BiLo the day before, I had gotten two beautiful portobello/portabello/portabella mushrooms. None of the spellings is satisfying spell check and it won’t give me any suggestions so take your pick. Anyhoo (as my sister in the Great Northwest hates to say), I decided I would have pizza and salad in addition to the traditional watermelon feast.

I thought I got a picture of the mushroom before I de-gilled it but I guess I didn’t. This is minus the gills (I removed the stem and scraped the gills out with a spoon.) This is a totally optional step. I’ve made it with the gills intact and liked it just as well. I would remove the stem, though.

I put it in the dehydrator until it was somewhat dried out. The dehydrator I have is a rather ancient Harvest Savor that VitaMix used to sell years and years ago. It has no controls. I plug it in and hope for the best. I left the mushroom for a couple of hours but your dehydrator may make faster work of it. Just check it every now and then to see if it’s ready for the Magic Tomato Sauce. I didn’t need much and the original recipe makes a LOT. I used one small tomato and made the other ingredients match. One change to the recipe was the substitution of Frontier Pizza Seasoning for the Italian. I probably made 1/4 recipe:

I took it off the plate and put it back in the dehydrator with the thought I was thankful I didn’t “un-cook” like that every day:

I had to cover it to concentrate the warmth.

Several hours later, I took it out, topped it with a tiny homegrown sliced tomato, slivered onion, red sweet pepper strips, and sprinkled it all with Pizza Seasoning. The garnish is my very own cinnamon basil:

You can drizzle nut “cheese” over it if you want but I prefer it without.

I had a “side salad” with one of my Mr. Stripey tomatoes out of my Square Foot Garden. I had to take a picture of it before I cut it up:

The pizza was quite tasty but, to tell you the truth, I enjoyed the salad more. 🙂

    MMM, Tommie; everything sounds yummy. I like mushrooms, but not often as I am beginning to lose the taste. But, it is a great suggestion for something special. I’ll have to reference this post when I need a quick idea.

    You still have to start it early in the day to have for supper but it isn’t as involved as some raw vegan recipes.

    Yum! I have these “cooking” in the dehydrator right now…I didn’t realise I had to start them in the morning and only put the mushies in around lunch time…but they’re still looking yummy 🙂

      Yes, that’s one reason why I like simpler foods. Gourmet raw takes longer than cooked!

    I’m just looking to use the p. mushrooms raw without any cooking. anyone have a unique suggestion?

      You could do that. They are dehydrated at a low temperature so they really aren’t “cooked” but if you prefer them the way they were picked, that would be fine. You could still make a pizza or use a couple of them as “buns” for a sandwich.
